RECIPE: CARAMEL BROWNIE MOOSE TRACKS MARSHMALLOW SANDWICHES
Soak up every last bit of summer with these chocolatey, marshmallow sandwiches! Perfect for enjoying poolside, on the couch, or by the campfire.
- 1 box of chocolate cake mix
- 2 eggs
- ¼ cup vegetable oil
- ¼ cup water
- 2 cups of Caramel Brownie Moose Tracks ice cream
- 2/3 cup marshmallow creme
Preheat oven to 350 degrees Fahrenheit. Combine cake mix, eggs, oil, and water in large bowl. Beat to combine fully.
Spoon batter into generous teaspoons on greased cookie sheet. Bake 10 minutes or until top is set.
Cool for a few minutes on wire racks.
Spread a generous layer of marshmallow creme on the flat sides of all of the cookies. Place cookies, creme side up, in shallow baking pan.
Remove Caramel Brownie Moose Tracks from freezer and allow to soften slightly. Using a small ice cream scoop, spread a scoop of ice cream onto half of the cookies. Loosely cover and freeze all cookies until firm, about 2 hours.
Remove from freezer and create the sandwiches by pressing two cookies together. Serve immediately or wrap each sandwich in wax paper and freezer in a container until ready to eat.
