Frozen Mint Moose Tracks Truffle Balls

If you love mint and chocolate, these Frozen Mint Moose Tracks Truffle Balls are about to become your new favorite treat.

Made with creamy Mint Moose Tracks ice cream, dipped in silky white chocolate, and finished with crunchy toppings, these no-bake truffle balls are as easy to make as they are impressive to serve. Perfect for sharing or keeping all to yourself!

Instructions:

  1. Line a baking sheet with parchment or wax paper and place in the freezer for 10 minutes.

  2. Remove the baking sheet from the freezer. Working quickly, use a smaller ice cream scoop, like our Perfectly Pint-Sized Ice Cream Scoop to scoop out round tablespoon-sized balls of ice cream. We shaped with our hands a bit.

  3. Place the ice cream balls on the baking sheet and return the sheet to the freezer for at least 1 hour, until firm.

  4. When your ice cream balls have frozen, combine the chocolate chips and coconut oil in a microwave-safe bowl.

  5. Melt the chocolate in the microwave for 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.

  6. Remove baking sheet from the freezer. Using a toothpick, dip the frozen ice cream balls into the melted chocolate and shake off any excess before returning to the lined baking sheet.

  7. Remove the toothpick and cover the hole with more melted chocolate and toppings of your choice. Work quickly! The melted chocolate will harden on the ice cream almost instantly. Repeat this process until you’re through your batch of ice cream balls.

  8. Freeze the decorated ice cream truffles for at least 30 minutes or overnight. Once hardened, place the balls into an airtight container and keep frozen.

  • 3 cups of white chocolate chips

  • 4 tsp of coconut oil

  • ½ cup of your favorite ice cream toppings, like chopped almonds, toasted coconut, sprinkles, chopped candy
