Moose Tracks Fourth of July Ice Cream Cake

The middle of summer has arrived, and we certainly know how to celebrate summer and family memories – with ice cream cake, of course!

This Moose Tracks Fourth of July Ice Cream Cake is easy, comes together quickly, and will serve a crowd. Whether you’re celebrating Independence Day or just looking for a fun, new recipe, you’re sure to add this to your favorites list!

Instructions:

  1. Remove the pound cake from the container. Remove Original Moose Tracks ice cream from the freezer and allow it to soften slightly.

  2. Grab a loaf pan and line it with plastic wrap so it’s hanging off the sides. You want to make sure the plastic wrap can cover the top of the pound cake on all sides!

  3. Carefully slice the cake in half lengthwise, then slice each piece in half the same way again so you’re left with 4 (long) pieces of cake.

  4. Place the bottom slice in the lined pan then top it with one third (a little over 1 cup) of the Original Moose Tracks, spreading it into an even layer.

  5. Add the second slice of cake on top of the ice cream layer.

  6. Repeat the process and add the third slice of cake, and remaining ice cream.

  7. Add the top layer of pound cake then securely wrap the plastic wrap around the cake (while it’s still in the loaf pan) and place it in the freezer until frozen solid, about 6 hours.

  8. When you’re ready to serve, take the cake out of the freezer and use the plastic wrap on the sides to lift the cake from the pan and onto a serving platter. Allow it to thaw for 5-10 minutes. Top the cake with whipped cream, raspberries or strawberries, and blueberries.

  9. Slice and serve immediately. Enjoy!

  • 1 loaf or 16 oz. Sara Lee frozen pound cake (or any other brand)

  • 3 ½ cups Original Moose Tracks ice cream

  • 1 ½ cup whipped cream

  • ½ cup raspberries or strawberries

  • ½ cup blueberries
