Waffle Iron Brownie Moose Tracks Sandwiches

Your waffle iron can be used for more than just breakfast on the weekends! Try these easy brownie ice cream sandwiches, made in a waffle iron. They’re simple and a really fun twist on a brownie sundae.  

Instructions:

  1. Preheat the waffle iron.

  2. In a large bowl, combine brownie mix, water, vegetable oil, and eggs and stir until well combined.

  3. When waffle iron is ready, spray with cooking spray. Add a heaping ¼ cup of batter, close, and bake until cooked through and crisp on the outside, 3-4 minutes. Remove from waffle iron and repeat with remaining batter.

  4. Let cool slightly. Now cut each waffle in to quarters and put a generous scoop of Brownie Moose Tracks ice cream between two waffle pieces to create a delicious sandwich. Enjoy!

  • 1 box (18.3-oz.) brownie mix

  • 1/2 c water

  • 1/4 c vegetable oil

  • 4 large eggs

  • Cooking spray
