Seasonal Flavors and Timeless Classics: Why We Crave Both

Every year brings a new lineup of seasonal flavors. Spring and summer welcome bright combinations like lemon, lavender, dragon fruit, and s’mores. As the weather cools, pumpkin spice, apple, maple, caramel and pecan take center stage before peppermint, gingerbread and other warm, holiday flavors round out the rest of the year.

Seasonal limited-time offerings, better known as “LTOs”, have become an exciting part of the food and beverage landscape. They give brands an opportunity to experiment, celebrate the season, and give consumers something new to look forward to.

Consumers are embracing the variety, too. Global research powerhouse Mintel noted in 2025 that  nearly half of diners prioritize trying new flavors most, or all of the time, when eating out.

While there’s plenty of excitement around trying something new, another flavor trend is happening right alongside it; we’re also finding comfort in the familiar.

What’s Old Is New Again

Nostalgia is having a moment, and it’s showing up in what we eat, too.

Familiar flavors can remind us of childhood treats, family traditions and moments we’ve shared with loved ones.

According to Mintel’s 2026 flavor trends, nostalgia and comfort are helping shape today’s flavor choices. Additional research from Mintel found that almost half of U.S. dessert and candy consumers enjoy desserts that remind them of their childhood.

The two trends don’t have to compete. There’s room to get excited about a seasonal flavor that just hit shelves and reach for a treat you’ve loved for years. Sometimes, the most exciting seasonal flavors are the ones that put a new spin on something familiar.

A Classic Dessert for a Reason
