Moose Tracks Brookie Ice Cream Sandwich

We never thought brookies could get more delicious, until we tried this Moose Tracks Brookie Ice Cream Sandwich recipe!
Brownies, cookies and Original Moose Tracks ice cream come together to make a delightful dessert you’ll remember forever.
Instructions:

First, you’ll need to prepare and bake the brownie for the top layer. Preheat oven to 350 degrees.

Line a 9x13 baking dish with parchment paper, making sure the parchment goes over the sides of the pan. Spray the parchment paper with cooking spray.

Melt the butter in a small saucepan on the stove. After melting, stir in the sugar and cocoa powder. Continue to cook on med-low while stirring for about a minute.

Pour the mix into a medium bowl and let cool for two minutes. Add vanilla extract and eggs. Mix with beaters for a few minutes until well-combined.

Add salt and flour to the mixture and mix until combined.

Pour the mixture over the parchment paper in the prepared baking dish. Use a rubber spatula to spread mixture around so it’s evenly dispersed.

Bake for 12-15 minutes until brownies are done. Set aside.

Now, you’ll need to work on the cookie dough base. Line another 9x13 baking dish with parchment paper and spray the paper with cooking spray.

In a large mixing bowl, mix butter and sugar until well combined. Mix in heavy cream, vanilla, and salt.

Add the warmed flour and continue to mix. Once incorporated, mix in the chocolate chips. Now, you have your edible chocolate chip cookie dough!

Press the mixture into the bottom of the prepared baking dish and refrigerate for at least 30 minutes.

Now, it’s time to assemble the sandwiches!

Remove ice cream from the freezer and allow it to soften for a few minutes.

Remove the cookie dough from fridge and spread a thick layer of ice cream over the dough base.

Remove the top brownie layer from the pan, using the parchment paper on the sides to slide it out.

Carefully peel the parchment paper from the brownies and place on top of the ice cream in the cookie dough pan.

Cover and place pan in the freezer for at least 4 hours.

Slice into sandwich squares before serving. Enjoy!
