Moose Tracks Brookie Ice Cream Sandwich

They taste just as delicious as they sound. Moose Tracks Brookie Sandwiches are the sensation that’s sweeping the nation. Moose Tracks + brownies + cookie dough = heaven!



  1. First, you’ll need to prepare and bake the brownie top. Preheat oven to 350 degrees. Line a 9”x13” baking dish with parchment paper, being sure that the parchment goes up the sides of the pan. Spray the parchment paper with cooking spray.

  2. Melt the stick of butter in a small saucepan on the stove. After it has melted, add the sugar and cocoa powder and stir to combine. Continue to cook on med-low while stirring for about a minute.

  3. Pour into a mixing bowl and let cool for two minutes. Add vanilla extract and eggs. Mix with beaters for a few minutes until well-combined.

  4. Add salt and flour to the mixture and continue to mix until well-combined.

  5. Pour over parchment paper in prepared baking dish. Use a rubber spatula to spread mixture around so it’s evenly dispersed.

  6. Bake for 12-15 minutes until brownies are done. Set aside.

  7. Now you’ll need to work on the cookie dough base:

  8. Line another 9”x13” baking dish with parchment paper and spray the paper with cooking spray.

  9. In a large mixing bowl, mix butter and sugar until well combined. Add heavy cream, vanilla, and salt and continue to mix.

  10. Add the flour and continue to mix. Once incorporated, mix in the chocolate chips.

  11. Press the mixture into the bottom of the prepared baking dish and refrigerate for at least 30 minutes.

  12. Now it’s time to assemble the sandwiches:

  13. Remove Moose Tracks® from freezer and allow it to soften for a few minutes. When you’re ready, remove cookie dough from fridge and spread a thick layer of Moose Tracks® over the dough base.

  14. Carefully peel the brownie top from the parchment paper and place on top of the Moose Tracks® in the cookie dough pan.

  15. Cover and place pan in the freezer for at least 4 hours.

  16. Remove and use a large sharp knife to cut into sandwiches. Enjoy!

  • Brownie Top:

  • 1 stick of butter

  • 1 cup sugar

  • ½ cup unsweetened cocoa powder

  • 2 eggs

  • 1 tsp vanilla extract

  • ½ tsp salt

  • Cookie Dough Base:

  • 1 stick of butter

  • 1 cup brown sugar

  • 2 tbsp heavy cream

  • 1 tsp vanilla extract

  • ½ tsp salt

  • 1 cup all-purpose flour (microwaved at 160 degrees for safe consumption)

  • ½ cup chocolate chips

  • Moose Tracks Ice Cream (your favorite flavor… we used Original Moose Tracks!)
