Instructions:
-
Preheat the oven to 350 degrees. Spray a muffin tin with cooking spray.
-
Combine peanut butter, sugar, brown sugar, and salt in a large mixing bowl. Mix until light and fluffy, about 4 minutes.
-
Add the vanilla extract and egg and mix until well combined.
-
Place a small handful of coarse sugar in a bowl to prepare to roll your cookies.
-
Divide the dough into twelve large balls. Roll each ball in the coarse sugar and place each ball in the greased muffin tin.
-
Now press the dough about a half of an inch up the side to make a small bowl in each tin.
-
Bake for about 14 minutes, or until the edge of the cookie is set and just beginning to turn golden.
-
Let cool completely.
-
When you’re ready to serve, remove the cookies from the muffin tin, then top with a big, round scoop of Moose Tracks ice cream. Serve immediately, or place in the freezer until you’re ready to serve.
-
Top with chopped peanuts or your other favorite ice cream toppings, if desired.
