Instructions:
-
Preheat the oven to 350 degrees. Spray a muffin tin with cooking spray.
-
Combine peanut butter, sugar, brown sugar, and salt in a large mixing bowl. Mix until light and fluffy, about 4 minutes.
-
Add the vanilla extract and egg and mix until well combined.
-
Place a small handful of coarse sugar in a bowl to prepare to roll your cookies.
-
Divide the dough into twelve large balls. Roll each ball in the coarse sugar and place each ball in the greased muffin tin.
-
Now press the dough about a half of an inch up the side to make a small bowl in each tin.
-
Bake for about 14 minutes, or until the edge of the cookie is set and just beginning to turn golden.
-
Let cool completely.
-
When you’re ready to serve, remove the cookies from the muffin tin, then top with a rounded scoop of Moose Tracks Ice Cream. Serve immediately, or place in the freezer until you’re ready to serve.

Top with chopped peanuts or your other favorite ice cream toppings, if desired.
