Moose Tracks Peppermint Ice Cream Layer Cake

Chocolate and peppermint are a natural pairing; peppermint and Moose Tracks are a match made in heaven! This cake is super simple to throw together and makes a beautiful, fun wintry dessert!
Instructions:

Add chocolate sandwich cookies to a large food processor or blender and pulse until a fine crumb is created. Reserve a small handful for the topping and set aside.

Add the melted butter to the remaining chocolate sandwich cookies and pulse until thoroughly combined.

Grease a 9×13" baking dish with cooking spray. Now press the cookie/butter crumb into the dish, pressing firmly to create a crust layer.

Freeze for approximately 20 minutes. In the meantime, remove your ice cream to soften.

Spread a layer of peppermint ice cream on top of the cookie crumb crust.

Now spread a layer of Extreme! Moose Tracks on top of the peppermint ice cream layer.

Freeze for 20 minutes or so until firmer. In the meantime, take out the frozen whipped topping to soften.

Once the whipped topping is spreadable, remove the cake from the freezer and spread the container over the top as frosting.

Sprinkle with the reserved cookie crumbs and some crushed candy canes.

Serve immediately, or place until the freezer until you’re ready to serve!
