Caramel Brownie Moose Tracks Ice Cream Sandwich Cake

For this recipe, we used a fun decorative ice cream sandwich mold, like this one, but you can also use 9” square pans and make a lovely square cake. 

Instructions:

  1. First we’re going to make the brownie sandwich. Preheat oven to 350 degrees and generously spray your sandwich mold (or 9” square pans) with cooking spray. If you only have one pan, you can bake one side at a time.

  2. Place butter in a microwave-safe bowl and melt in 30 second increments, stirring each time, until smooth and completely melted.

  3. Transfer to a large mixing bowl and add the sugar and whisk until combined.

  4. Add eggs and vanilla and whisk until combined.

  5. Now add the cocoa powder, flour, salt, and baking powder. Stir until you’ve got a uniform, thick batter.

  6. Spread half of the batter into one of your prepared sandwich molds. Spread the other half onto the other side of the mold.

  7. Bake for 15 minutes, or until brownie is beginning to set. Let cool completely.

  8. Remove Caramel Brownie Moose Tracks from the freezer and allow to soften a bit.

  9. Remove the brownies from their molds and place on a serving tray.

  10. Spread an even layer of Caramel Brownie Moose Tracks ice cream on one side of the sandwich.

  11. Add the other side to make a complete sandwich. Press firmly to combine.

  12. Cover completely in plastic wrap and place in the freezer until firm.

  13. When you’re ready to serve, remove from the freezer and cut into slices with a sharp knife.

  14. Enjoy!

  • 1 tbsp vanilla extract

  • 1 c cocoa powder

  • 1 c all-purpose flour

  • 1 tsp salt

  • ¾ tsp baking powder
