Moose Tracks Pizzelle Ice Cream Sandwich

If you’ve got a pizzelle maker, you must try these Moose Tracks pizzelle ice cream sandwiches. There’s nothing like a crisp pizzelle with delicious ice cream sandwiched in-between!
Instructions:

Make the pizzelles: combine first six pizzelle ingredients in a mixing bowl and mix until well combined.

Heat up your pizelle iron, and once ready, drop a heaping tablespoon onto the bottom plate of the iron and cook according to the pizzelle iron’s instructions.

Continue until all of your pizzelle batter has been used. Make sure to use a wire rack to cool the pizzelles completely. While cooling, you may also wish to trim off some of the outsides of the pizzelles to remove imperfections.

You have two options – you can assemble and serve fresh with crisp pizzelles, or you can make ahead and freeze the sandwiches, then pull them out when you’re ready to serve. If you go with this method, the pizzelles will be softened by the ice cream a bit.

To make the sandwiches, remove Moose Tracks from the freezer and allow to soften a bit.

Now make the chocolate coating, which will provide a layer of protection between the pizelle and the ice cream. In a microwave safe bowl, combine 2 cups of chocolate chips with 2/3 c of coconut oil. Heat in the microwave in 30 second intervals, stirring between. This should take roughly 2 minutes to make a smooth, melted mixture.
