Extreme! Moose Tracks ice cream gets dipped in melty chocolate and finished with your favorite toppings for an easy, no-bake dessert that’s equal parts fun, festive, and seriously delicious. Perfect for sharing… or keeping all to yourself. 😉
Instructions:

Line a baking sheet with parchment or wax paper and place in the freezer for 10 minutes.

Remove the baking sheet from the freezer. Working quickly, use a smaller ice cream scoop, like our Perfectly Pint-Sized Ice Cream Scoop to scoop out round tablespoon-sized balls of ice cream. We shaped with our hands a bit.

Place the ice cream balls on the baking sheet and return the sheet to the freezer for at least 1 hour, until firm.

When your ice cream balls have frozen, combine the chocolate chips and coconut oil in a microwave-safe bowl.

Melt the chocolate in the microwave for 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.

Remove baking sheet from the freezer. Using a toothpick, dip the frozen ice cream balls into the melted chocolate and shake off any excess before returning to the lined baking sheet.

Remove the toothpick and cover the hole with more melted chocolate and toppings of your choice. Work quickly! The melted chocolate will harden on the ice cream almost instantly. Repeat this process until you’re through your batch of ice cream balls.

Freeze the decorated ice cream truffles for at least 30 minutes or overnight. Once hardened, place the balls into an airtight container and keep frozen.
