Moose Tracks Wafer Cookie Cake

This cake is fully enrobed in an indulgent brownieā€¦ does it get any better?! Plus, thereā€™s a great surprise inside: a layer of creme-filled wafer cookies! I guess it does get better!

Adapted from a recipe by Naomi Robinson.

Instructions:

  1. Line a 13x17 baking sheet with parchment paper. Preheat oven according to brownie box instructions.

  2. Prepare brownie batter according to box instructions. Spread onto the baking sheet lined with parchment paper in a thin layer.

  3. Bake for 17 minutes and then allow to cool completely.

  4. Next, cut the brownies into large rectangles using a bread loaf pan as a guide. The goal is to make a bottom, sides, and a top.

  5. Now take the bread loaf pan and line with parchment paper.

  6. Place the large brownie pieces to create a bottom and sides in the pan.

  7. Cut an extra brownie piece to serve as the ā€œtopā€ of the cake and set aside.

  8. Spread a small layer of Original Moose Tracks in the loaf pan. Youā€™ll make 4 layers of ice cream, so this should take up just under Ā¼ of the height of the pan.

  9. Next spread a layer of Chocolate Moose Tracks, using a spatula to distribute smoothly.

  10. Now take your wafer cookies and create an even layer.

  11. Now spread a thin layer of Chocolate Moose Tracks over top the wafer cookies.

  12. Finally, spread a layer of Original Moose Tracks to top it off. Now place your brownie ā€œtopā€ over the ice cream and press firmly.

  13. Freeze for at least 3 hours.

  14. When youā€™re ready to enjoy, remove from the freezer, cut and serve!

  • 1 box of brownie mix

  • 1.5 cups of Original Moose Tracks, softened

  • 1 cup of Chocolate or Extreme! Moose Tracks, softened

  • Package of creme-filled wafer cookies, like chocolate fudge Pirouline or Pirouette cookies
