Salty Caramel Caribou Ice Cream Bark

This Salty Caramel Caribou Ice Cream Bark is the ultimate no-bake, freezer-friendly treat! It’s sweet, salty, crunchy, and wildly satisfying.
Creamy layers of Greek yogurt and Salty Caramel Caribou ice cream get topped with a silky chocolate shell and finished with pretzels and flaky sea salt for that perfect sweet-salty snap. It’s easy to make ahead, fun to break into shards, and even more fun to eat straight from the freezer!
Instructions:

Line an 8’ x 11’ baking sheet with parchment paper.

Spread a thin layer, about a half cup, of Greek yogurt onto the paper and let it freeze for at least 30 minutes.

In the meantime, scoop out 2 cups of Salty Caramel Caribou into a bowl and let it soften.

Remove baking sheet from the freezer. Spread the softened Salty Caramel Caribou on top of the yogurt and put it back in the freezer for at least 30 minutes.

Using the microwave, melt bittersweet or semisweet chocolate chips in a microwave-safe bowl with 2 teaspoons of coconut oil in 30-second intervals until melted and smooth, stirring in between.

Remove baking sheet from the freezer. Quickly spread melted chocolate over the ice cream layer. Immediately sprinkle on any of the optional toppings.

Return to freezer and let it set for at least 3 hours before breaking into shards. Enjoy!
