Snickerdoodle Moose Tracks Blondie Parfaits

We thought it would be fun to try a combination of cinnamon and Moose Tracks Ice Cream. Turns out – it makes for a great combo! Let us know what you think of these simple yet delicious parfaits. 

Instructions:

  1. First we’ll make the blondies. Preheat the oven to 350 degrees, then line a 13x9 inch pan with parchment paper and spray lightly with cooking spray.

  2. In a large bowl, place butter and sugars and cream until light and fluffy.

  3. Add in the eggs and vanilla and mix until well combined.

  4. Add in the flour, cinnamon, baking powder, and salt, and mix until just combined.

  5. Fold in the peanut butter chips and the chocolate chips .

  6. Spoon the batter into the prepared 13x9 pan and spread until smooth.

  7. Bake for approximately 25 minutes or until a toothpick inserted in the center comes out mostly clean (not wet batter).

  8. Allow to cool completely.

  9. Slice the snickerdoodle blondies into small bite sized cubes and store in an air-tight container until you’re ready to serve.

  10. When ready to serve, simply layer the blondies and scoops of Original Moose Tracks ice cream into a bowl or trifle bowl.

  • 1 c brown sugar

  • 2 eggs

  • 1.5 tsp vanilla

  • 2.5 c all-purpose flour

  • 1.5 tsp cinnamon

  • 1 tsp baking powder

  • ½ tsp salt

  • ¼ c peanut butter chips

  • ¼ c chocolate chips

  • Carton of Original Moose Tracks Ice Cream
