Moose Tracks PB&J Cookie Sandwiches

Feeling a little nostalgic? These “peanut butter & jelly sandwich” inspired treats are the perfect mixture of childhood nostalgia and homemade deliciousness.
Instructions:

First, make the peanut butter cookies. Preheat the oven to 350 degrees.

Whisk baking powder and flour together in a bowl.

In a separate large mixing bowl, mix butter, sugars, and a pinch of salt and cream until smooth.

Incorporate the dry ingredients into the butter mixture.

Next, add the peanut butter and mix until combined.

Now, add the egg and vanilla extract and beat until well incorporated.

Roll the dough into 2-inch balls and place them on a baking sheet lined with parchment paper.

Flatten cookies with a fork, making a criss-cross pattern.

Bake for approximately 11 minutes, until the edges have begun to turn golden.

Allow to cool completely.

Now, flip the cookies upside down, and spread a generous spoonful of jam on each flat side of the cookie.

Place in the freezer until the jam sets, about an hour.

Remove Moose Tracks from the freezer and allow to soften until spreadable.

Dice up some strawberries for garnish.

1 c peanut butter (preferably a brand with sugar, such as JIF)

1 egg

1 tsp vanilla extract

2 cups of strawberry jam
