Moose Tracks Cake Mix Cookie Sandwiches

Did you know that a box of cake mix can be used to make fluffy, delicious cookies? They’re even better when used as the cookies for a delicious Moose Tracks ice cream sandwich. 

Instructions:

1. Preheat oven to 350 degrees fahrenheit. Line a baking sheet with parchment paper.

2. In a large bowl, combine cake mix, eggs and oil. Mix until well combined.

3. Scoop cake mix cookie dough onto the baking sheet, being sure to leave enough room for the cookies to spread a bit. Try to keep the scoops as even as possible so they make even sandwich cookies!

4. Bake for 10 minutes and let cool completely.

5. When you’re ready to serve, simply add a generous scoop of Moose Tracks between two cake mix cookies and enjoy!
