Moose Tracks Thumbprint Cookie Ice Cream Cup

These thumbprint cookie cups are delicious and cute! They’re a fun treat to add a new twist to ice cream sandwiches. 


  1. In a large bowl, cream butter and sugar until light and fluffy. Next, addthe egg yolk, milk and vanilla, and mix to combine thoroughly.

  2. In a separate bowl, combine flour, cocoa and salt.

  3. Gradually add the dry ingredients to the wet ingredients mixture and stir well.

  4. Cover and refrigerate for an hour.

  5. After the hour has passed, preheat oven to 350°. Shape dough into 1-in. balls and place on greased baking sheets. Using a wooden spoon handle or your thumbs, make an indentation in center of each cookie.

  6. Bake until center is set, 10-12 minutes.

  7. Let cool completely. When you’re ready to serve, add a generous scoop of Moose Tracks ice cream to each thumbprint.

  8. Enjoy!

  • 1/2 cup butter (one stick) at room temperature

  • 2/3 cup sugar

  • 1 egg yolk

  • 2 tablespoons milk

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1/3 cup baking cocoa

  • 1/4 teaspoon salt
