Instructions:

  1. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

  2. Bring water, butter, and salt to a boil in large saucepan over medium heat. Dump the flour in and stir continuously with a wooden spoon until the mixture forms a ball.

  3. Continue stirring constantly and cooking on medium heat for approximately 2 minutes, until a film of cooked flour develops on the bottom of the pan.

  4. Remove from heat and transfer dough to a stand mixer (with a paddle attachment) or a food processor.

  5. Mix the dough to cool it slightly then begin adding the eggs, blending each one thoroughly before adding the next. Once complete, the dough will resemble a sticky paste.

  6. Cut a corner of a plastic bag to allow a ½" opening. Fill the bag with dough and pipe 18 large “chocolate kiss” shapes onto your prepared baking sheet. Try to aim to make the dough dollops about 1.5” wide

  7. Wet your finger with a bit of water and press down the point of the “kiss”, rounding off the top of the dough.

  8. Bake 20–25 minutes until they become golden brown and the outsides appear dry. Remove from oven and cool completely on a wire rack.

  9. To assemble, cut puffs in half using a serrated knife. Fill the bottom half with scoop of Original Moose Tracks ice cream. Place the top of the puff on top of ice cream and serve immediately!
