Moose Tracks Truffles (in an ice tray!)

Chocolate lovers, look no further! Take your love for chocolate + Moose Tracks to a new level with these ice tray truffles. They’re fun and simple, but they look fancy! 

Instructions:

  1. First, we are going to get the ice cream prepared: count the number of wells in your ice cube tray and scoop that number of small scoops of Moose Tracks onto a sheet pan lined with parchment paper. Put the pan into the freezer for at least 30 minutes.

  2. Now spray your ice cube tray with a little bit of cooking spray.

  3. Combine the chocolate chips and vegetable oil in a large microwave safe measuring cup and heat in microwave in 30-second bursts, stirring each time. Repeat until there are just a few non-melted chips. are still some non-melted chips. Now stir it up for a few minutes until everything is melted and fully combined.

  4. Pour the melted chocolate into the wells of the ice cube tray, filling them about 1/3 of the way up. The goal is to have enough chocolate left over in the measuring cup to cover the tops of the tray after adding the ice cream scoops. Pick up the tray and tilt and move it around to encourage the chocolate to cover the sides of the wells as close to the top as possible.

  5. Remove your ice cream balls from the freezer and drop one into each well, pushing them gently into the chocolate. Pour the remaining chocolate over the top and smooth with a spatula. Try to do this as quickly as possible to avoid melting.

  6. Now you’re almost done! Just put the truffles into the freezer for at least an hour to set.

  7. When you’re ready to serve, remove the tray from the freezer and pop each truffle out by gently twisting and tapping the tray.

  • 1/3 to 1 pint of your favorite flavor of Moose Tracks – we used Mint Moose Tracks and Chocolate Moose Tracks

  • 1 10 oz. bag of bittersweet or semisweet chocolate chips

  • 1 tbsp. vegetable oil
